This is a nice Vinaigrette made with ‘real’ ingredients. The store bought version just can’t compare. Great on traditional salads or even a Caprese Salad.
3/4 teaspoon Mustard (optional)
3/4 each Shallots, minced
1 1/4 cups Olive or canola oil
3/4 teaspoon Sugar (optional)
3/8 teaspoon Salt
1 5/8 dashes Black pepper, ground
1 1/4 tablespoons Chives, parsley, or tarragon (optional), minced
Combine the vinegar, mustard, and shallots.
Gradually whisk in the oil.
Adjust the seasoning with sugar, salt, and pepper.
Add the fresh herbs if desired.
