So its tax day and, yes we were among the procrastinators. But that is one of the reasons we picked what we did for dinner tonight. We selected a simple sandwich and Caprese Salad with a bit of a twist, Vinaigrette instead of Balsamic vinegar. That way if we ran too late we still had an easy to prepare dinner. Well, fortunately we were done by noon.
The cool thing is that one of my favorite sandwich shops, Schlotzsky’s, was running a special for tax day. Buy a drink and chips and get a sandwich FREE. So YES we made a swap. It was an easy choice since we came in under budget on our shopping trip this past week.So other than having to pay taxes this year the day ended well
