When the temps start getting as high as they have been we will do anything possible to keep the heat out of the house.
Recently we discovered grilled foil packets because they don’t heat up the house. As it turns out the whole family loves them, and there is NO MESS (that is the best part, really).
There really isn’t much to them– they are so easy to do! You just throw all the food in, fold it up and put it over a grill, a campfire, or even in the oven

Well it looks like summer is in full swing here. Again today we were hit with another critical alert from our electric company. Another 42 cent/kwh rate day.
That is exactly why we started really looking hard for good crock pot meals. Tonight’s has moved into the realm of a family favorite. Usually we don’t have any specific meal planned on the weekends. This weekend is no exception. This morning though we took a little time to visit a couple of our local farmers markets, just to browse around and see what is in season. It’s really nice to see the revitalization of the Historic Oklahoma City Farmers Public Market. It was built in 1928 and fell into disrepair for a period of time. The new owners have done an admirable job restoring it. As it turns out it’s still a little early in the season here for a whole lot. Still it was a lot of fun.

Weekends tend to be a bit unpredictable. Sometimes we have company. Sometimes we go out. Often times our kids have their own agendas. So we usually plan dinners that offer a lot of flexibility. Tonight is our usual busy night so we had one of our quick and easy meals but we added a twist. We made a cactus based salsa with a family connection.
One day we went on a family outing and our son fell and landed on a Prickly Pear cactus. So we found a recipe with cactus in it. We told him that if he ate it it would be his revenge 🙂
