Frittata’s are so delicious and versatile.
They are a great way to utilize leftovers. This one uses leftover ham and zucchini from earlier in the week.
1 tablespoon olive oil
1 cup sliced ham
2 small zucchini, slice 1/4 inch thick
8 large egg, beaten
1/3 cup gruyere cheese, grated
Salt and Pepper to taste
Preheat oven to 425
Heat oil in a skillet over medium high, add ham and zucchini and cook for about 5 minutes. Season with salt and pepper
Add eggs and cheese, season again with salt and pepper, and stir to combine
Cook, undisturbed, until edges are set (about 2 minutes)
Transfer skillet to oven and bake until top of frittata is set (10 -14 minutes)
Invert or slide onto a plate and cut into wedges
Looks delicious. We do the same and use leftovers for this sort of recipe
