Tonight our culinary adventure took us to back to Mexico. One of the classic dishes from mexico, one of either Puebla, Oaxaca, or Tlaxcala, is Mole’. Mole’ is an ancient work for mix which is appropriate as it is a mixture of chili’s, chocolate, and various spices.
The dish we had tonight was Slow Cooker Chicken Mole’. We decided to put the Mole’ into tortilla’s as burritos just to make it easier to eat. We had originally planned to make a Jicama Salad as a side dish but we had plenty of Mango Salsa left from earlier in the week. We still plan to make the Jicama Salad over the weekend. As an additional side dish, we also had left over Gallo Pinto.
