So tonight we get the benefit of the ‘Batch Grilling’ we did earlier this week. Also we love Mexican food! So tonight was Mexican night again. We had parts of this menu before. And as usual we love it. Tonight we had Chicken Black Bean and Avocado Salad. This is a really easy meal when you are in the mood for something light yet satisfying. With the grilled chicken from earlier this week there wasn’t even anything to cook for this part of the meal. Just cut it all up, mix it together and your off an running. We than added a little Spanish Rice. This time it was just a box of Rice-a-Roni. Sweet and simple. Little to know cooking. So, little to no heat. Perfect for the summer
That looks yummy! I love to batch cook too, so much easier than firing up the grill, yet again, and standing in the blast of the heat.

It is yummy you should give it a try. Oh, and I agree I enjoy grilling but that blast of heat in the summer can be a challenge. Batching is a great way to handle it.
