During the summer it seems like we always want something light to eat. The heat and increased activity seems to make us want lighter dishes.
This is a wonderful light summer salad that is the perfect sides for so many summer dishes.
Servings: 4
1/4 cup olive oil
1 tablespoon balsamic vinegar
1 tablespoon raspberry jam, or your flavor
1 1/2 teaspoons dijon mustard
1 pound sugar snap peas
3 cups iced water
2 pounds strawberries, hulled and sliced
Whisk olive oil, balsamic vinegar, raspberry jam, and Dijon mustard in a bowl
Blanche Sugar Snap Peas (about 30 seconds) and cool in ice water
Combine all dressing, peas and strwberries in a bowl and toss to coat

First we made a dressing using
1/4 cup olive oil
1 tablespoon balsamic vinegar
1 tablespoon raspberry jam
1 1/2 teaspoons dijon mustard.
Then we blanched 1 pound of sugar snap peas, and sliced 2 pounds of strawberries.
Finally we put it all in a bowl and tossed to coat everything with the dressing.
