This evening the temp outside was even higher than last night. The temperature in the car showed 96, the radio said 94 and the heat index was 108 degrees Fahrenheit. I’m so glad we decided to have a no-cook evening (other than blanching one ingredient) it turned out to be the perfect decision. This evening we had
Bagel Sandwiches and a nice fresh Strawberry and Snap Pea Salad.
The sandwiches we have had before. In fact, they are often requested. They are light and healthy. A great option on a hot evening. The Strawberry and Snap Pea Salad was a new dish for us. I’m so glad we tried it. It turned out the be a great companion for the sandwich.
Oh you may have noticed the paper plate in the picture. No need to run the dishwasher tonight either. Great for our ‘Summer Electric Plan.’
