Grilled Summer Vegetables


Summer is definitely grilling season.

This recipe is a great way to use whatever vegetable that is in season.

It is so tasty and such an easy way to save electricity.

Ingredients

MARINADE
1/3 cup balsamic vinegar
1 cup olive oil
1 1/3 cloves fresh garlic, minced
2 teaspoons fresh rosemary, chopped
2 teaspoons fresh oregano, chopped
2 teaspoons fresh basil, chopped
2 teaspoons fresh parsley, chopped
2 teaspoons sugar
Salt and fresh ground black pepper to taste

1 large Florida yellow squash, sliced 3/4 inch thick
1 large Florida yellow squash, sliced 3/4 inch thick
1 medium Florida eggplant, sliced 3/4 inch thick
1 large Florida red onion, sliced 3/4 inch thick
1 large Florida tomatos, sliced 1 inch thick

Directions

Combine all ingredients for marinade and pour over sliced vegetables, marinate for 30 minutes.

Cook on a hot grill for 2-3 minutes on each side.
