Swedish Pork Chops with Mushroom Gravy


We wanted to try Swedish Baked Potatoes. Well if you do that you have to have a Swedish protein with it. So I went out and looked at several recipes for Swedish Pork Chops. In the end this is what I came out with. I don’t know if it is truly Swedish. But it is Swedish inspired.

Servings: 4

4 thick pork chops
2 tablespoons olive oil
2 tablespoons flour
1 teaspoon salt
1/2 black pepper
1/2 teaspoons ground ginger
1/2 teaspoon onion powder
1/2 teaspoon garlic powder

2 tablespoons butter
1 pound mushrooms

1 cup heavy cream

Mix dry ingredients and dust pork chops on all sides
Heat olive oil in a heavy skillet
Sear pork chops on both sides, reduce heat, cover pan, and cook until cooked through

As pork chops are finishing, heat butter in a separate pan and brown mushrooms.
When pork chops are done, remove pork chops from pan and deglaze pan with water
Transfer mushrooms to the pork chop pan add heavy cream
Mix remaining flour mixture with a small amount of water and add to pan with heavy cream.
Cook until gravy thickens to desired thickness.
