Tonight was make your own salad night at the house. We also combined Baked Potato night with it. We love doing this It makes a

quick and easy dinner. You do have to bake the potatoes ahead of time, but, once they are done it is quick. The nice thing about it is that it is also healthy, depending on what you choose to put on them. Again, like last night’s Fajitas, everyone gets to individualize their own dish. It’s a big hit at our house! I did do something different from the family by deciding to bake a sweet potato instead of a regular baked potato. But that is what is nice about this meal. You can switch it up with  no problem and you make everyone happy!
