We love Mexican food especially fajitas. They are just about a complete meal in themselves. It covers the basic food groups in themselves. All we needed to do was add some refried beans and blue corn tortilla chips. These are store bought fat free refried beans. If you know of a great recipe please let me know. At some point I would love to try making my own refried beans. We enjoy doing this meal because everyone can individualize their own plate. The family enjoys doing this.
