Fajitas


 

Fajita is a  ‘Texican’ term for little strips of meat. We love making fajitas, in particular, chicken fajitas. This is an easy and enjoyable meal to have at home. Everyone can individualize their own dish with the ingredients that they like. Try different toppings to keep it interesting.

Serves 4:

4 chicken breasts
1 large onion
1 green bell pepper
2 red bell peppers
2 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons lime juice
1 teaspoon oregano
1 teaspoon garlic powder
1/2 teaspoon ground cumin 
1 teaspoon salt
1/4 cup cilantro
2 cups shredded letuce
1 large diced tomato
1/4 cup shredded cheese
Jalepeno’s as desired
Sour cream as desired
Salt and pepper, to taste
1 package tortillias

Mix marinade, olive oil, lemon juice, lime juice, oregano, garlic powder, cumin, and cilantro together in a mixing bowl.

Butterfly each of the chicken breasts. Coat all surfaces of the chicken breasts with marinade. Put the chicken and any remaining marinade in a plastic storage bag and leave it to marinate for at least one hour.

Slice onion in half from root to stem, then sliced into 1/4 inch strips from root to stem and mix in salt. (The salt will help draw out the moisture so they will caramelize easier)

Slice Peppers into 1/4 inch strips

Slice chicken breasts into 1/4 strips

Heat oil in a wok over medium high heat.
Add onions to wok and toss to coat with oil then allow them cook until they start to caramelize. Toss and repeat until they are almost done.

Add chicken and sear on all sides

Add bell peppers and continue to cook until chicken is done and bell peppers are tender.

Adjust seasoning as needed

On one tortilla put a small amount of lettuce, add chicken, onions, bell peppers. add other toppings as desired, tomatoes, sour cream, jalepeno’s, shredded cheese, cilantro, etc.
