Tomatoes with Basil-Garlic Bread


This is almost like a little Margarita Pizza. It’s so tasty it’s almost addictive. But it is so easy to make. It pairs wonderfully with our Tuscan soup.

Servings: 4

6 tablespoons olive oil
1 teaspoon dried basil leaves
1/2 teaspoon garlic powder
1 loaf French bread
6 slices tomato, 3/4 inch thick
1 cup mozzarella cheese, grated
Combine oil, basil and garlic powder; reserve.
Cut bread in half lengthwise;
brush basil mixture evenly on cut side of bread.
Layer tomatoes on top of bread and sprinkle with cheese

Place in oven preheated to 450 until bread is toasted and cheese melted.
Cut bread diagonally into slices.

Serve.
