Italian! I know, I know, its Cinco  De Mayo. Mexican Independence day, or so many think. Really its not. It is the day the Mexican Army beat the French forces at the Battle of Puebla.

Enough of that though. We have Mexican food so much that sometimes its nice to have something else. And this is one of those days. And this is a great go to meal for just such an occasion.

Tomatoes with Basil-Garlic Bread

This is almost like a little Margarita Pizza. It’s so tasty it’s almost addictive. But it is so easy to make. It pairs wonderfully with our Tuscan soup.

We love this recipe. We originally had a recipe like this at the Olive Garden. I think they now use Kale instead of Spinach. Anyway I searched High and Low until I found this taste alike version of their recipe. Sadly, I don’t remember where I found it so that I can give proper attribution.
