Italian! I know, I know, its Cinco De Mayo. Mexican Independence day, or so many think. Really its not. It is the day the Mexican Army beat the French forces at the Battle of Puebla.

We love this recipe. We originally had a recipe like this at the Olive Garden. I think they now use Kale instead of Spinach.
