Its been a while since we have had a meal that was this well received. We have had the the main part of the meal before, the Coconut Curry Chicken. But this time I cooked it a little different. When I saw this recipe I thought what a fun way to use Zucchini. But I was unsure how the family would feel about it. Well they LOVED it. They actually raved about it. It didn’t make a whole lot 4-5 pancakes so I was a little concerned about them being filling enough. I was wrong. It was perfect. That is why wanted to copy it.
