In this menu we finally got to do our much desired grilling.
Monday was tax day and there was a special at schlotzsky’s so we made a swap from our menu. Why? Because
they were giving away sandwiches with the purchase of a drink and chips. Mmmm nice. Although we made this swap we still had the scheduled Tomato and Mozzarella Salad. This was basically a Caprese salad with a twist it uses a Vinaigrette instead of Balsamic vinegar. It turned out to be a beautiful and delicious dish.
After that we stuck to our menu
So many restaurants around town have Taco Tuesdays. So it sounded like a great idea. Start with Pork Carnitas made marinated in the slow cooker and you have the basis for a flavorful, easy and delicious dinner, Shredded Pork Tacos. Combine that with Mango Salsa and you have a great dinner. Really, the Mango Salsa was the true hit of the meal. It was a great counter point to the pork in the tacos.
Wednesday we finally got to grill. YES. We made Brazilian Flank Steak and Vegetables with Spicy Honey Peanut Sauce. This turned into a fun and tasty Thai/Latin fusion dinner.
Then Thursday we had Crocked Orange Chicken and Oriental Pea Pods and Carrots. Both of these were relatively quick meals when it comes to prep time. The Crocked Orange Chicken does have a long cook time. But it is in a crock pot. The actual prep time though was low. The Pea Pods were actually cooked in the microwave. So again a quick meal. As quick as they both were, they were both delicious. Who would have ever thought of putting Walnuts in a Vegetable dish. It was a delicious experience.
Friday was a night on the town at the OKC Arts Festival. We really enjoyed the time as a family.
