Mango Salsa


This is a nice light and refreshing alternative to that more traditional tomato based salsas. The jicama, with its crisp, potato like, texture, adds a great crunch to the salsa. It is also a wonderful vehicle for the other flavors. Jicama, like a potato, has little flavor of its own but absorbs the flavors of the lime, mango and cilantro and become little flavor bombs throughout the salsa.

Works great on tacos or as a side to any lighter Latin dish. 

Serves 4:

1 cup mango, chopped
3 1/4 tablespoons jicama, chopped
3 1/4 tablespoons sweet red pepper, chopped
1 5/8 tablespoons cilantro, chopped
3 1/4 tablespoons red onion, chopped
3/8 jalapeño chile (1 to 2), seeded and finely chopped
3/4 limes, use the juice of (about 2 to 3)
Add salt to taste

Combine all ingredients, cover and refrigerate for at least 30 minutes to blend flavors.
