This is a delicious Thai inspired way to server vegetables. However, with the Cilantro and Pepper it can also be paired well with certain Latin based dishes for a bit of a fusion flare.
Servings 4:
1/3 cup honey
2 2/3 tablespoons peanut butter
1 1/3 tablespoons soy sauce
2 teaspoons chopped fresh cilantro
2/3 dash crushed red pepper flakes
2 2/3 cups broccoli florets
2 2/3 cups sliced carrots
2 2/3 cups snow peas
1 quart cooked white rice
Combine: honey, peanut butter, soy sauce, cilantro and red pepper in small bowl; mix well and set aside.
Steam vegetables until crisp-tender; drain well.
Toss steamed vegetables with peanut sauce in large bowl.
Serve immediately over rice.
