Spaghetti Squash Chow Mein #healthy #recipe


Chow Mein means ‘fried noodles’, chow meaning ‘fried’ and mein meaning ‘noodles’. But this is one of the dishes we thought we would give a try in order to reduce the carbs in our diet coming via pasta or noodles. Another is the Smoky Mexican Stir Fry.

Fortunately Spaghetti Squash when cooked properly provides a noodle like flesh. So you have not only the look but the taste of traditional Chow Mein

As with the Smoky Mexican Stir Fry this turned into a truly healthy family favorite.

Serves 4

1 large Spaghetti squash
1/4 cup soy sauce
3 cloves garlic, minced
1 tablespoon brown sugar, packed
2 teaspoons ginger, grated
1/4 teaspoon white pepper
2 tablespoons olive oil
1 each onion, diced
3 stalks celery, sliced diagonally
2 cups coleslaw mix, shredded cabbage and carrots

Cook the squash

Separately stir fry the celery, onion, and coleslaw mix until tender.

Make the sauce by combing soy sauce, garlic, brown sugar, ginger, and white pepper.

Toss all ingredients together till all coated. Enjoy
