Tonight was Mexican night. We had Chicken Enchiladas, Corn Salsa and an Avocado Tomato Salad. The Enchiladas were great but the real hit was the Corn Salsa and Avocado Tomato Salad. These were both new to us. The Corn Salsa was really interesting. I’ve never used Pumpkin seeds in a recipe like this before. They provided a really nice textural contrast to the salsa in juxtaposition to the corn. The cucumber did much the same for the Avocado Tomato Salad that coupled with the tartness of the lime made this the perfect complement to the meal as a whole. It was all very tasty!
