Servings: 4
1 1/2 pounds sweet potatoes or yams, peeled and quartered
2/3 cup orange juice, divided
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 tablespoon butter or margarine
1 tablespoon cornstarch
1/3 cup honey
Combine sweet potatoes and 1/3 cup orange juice in 2-quart microwave-safe baking dish; sprinkle with ginger and nutmeg. Dot with butter.
Cover and microwave at HIGH (100%) 7 to 10 minutes or until sweet potatoes are tender, stirring halfway through cooking time.
Combine cornstarch, remaining 1/3 cup orange juice and honey in medium microwave-safe bowl. Microwave at HIGH 2 minutes or until thickened, stirring every 30 seconds.
Drain liquid from sweet potatoes; add to honey mixture. Microwave at HIGH 1 minute.
Pour sauce over sweet potatoes and microwave at HIGH 1 minute more or until sweet potatoes are thoroughly heated.
Sounds amazing! I’ve never tried cooking sweet potato in the microwave before I will have to experiment!

Yeah, I thought so too. I’m looking forward to trying it. If it is good it’ll be a great summer time dish. I’m always looking for ways to keep the heat down in the kitchen that time of year. Grilling, Microwaving, Crock pots. Things like that. I’ll post again once we have tried it.

I just wanted to let you know that we made the Honey-Glazed Sweet Potatoes tonight. They were awesome!!! The only issue I had with making them was me. My cuts were inconsistent so the cooking was inconsistent. Some of the wedges were a little firmer than others. Never-the-less the results were great. We will be making this recipe again.
