Chicken Enchilada

Chicken Enchiladas

This is a nice Mexican comfort food. We usually make this as a casserole. Sometimes we use flour tortillas and role the enchiladas, put them in a casserole pan, top them with cheese and sauce and finally bake them.

Servings: 8

2 chicken breast halves without skin
12 corn tortillas
1/2 can refried beans
2 cup colby cheese, lowfat
1 can green enchilada sauce

Heat large nonstick skillet over high heat. Spray with nonstick cooking spray. Cook chicken until no longer pink, about 5 minutes. Dice chicken into small pieces

Using 4 tortilla’s cover the bottom of a 6″ x 9″ cassarole pan Spread refried beans over tortillas. Using 4 tortilla’s cover beans Place cooked chicken strips on top of tortillas. Top with enchilada sauce and 2 tablespoons cheese. Using 4 tortillia;s cover chicken
Top with remaining cheese.

Heat in 350ºF oven about 20 minutes or microwave on HIGH for 5 minutes.
