Chicken and Black Bean Avocado Salad

This is a nice go to recipe when you are in the mood for a light yet satisfying meal.

Servings: 4

1 can black beans (14.5-oz.) drained 
2 avocados, pitted peeled and cubed
1 tomato, seeded and chopped
3/4 cup frozen corn, thawed
1/2 small red onion, peeled and minced
1 lime, juiced
3/4 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup Miracle Whip® light
2 cups chicken breast, cubed
6 cups mixed greens
2 tablespoons chopped fresh cilantro

Mix black beans, tomato, corn, red onion, lime juice, cumin, salt and pepper in a medium bowl. Toss with mayonnaise until evenly coated. Lastly add the avocados and gently mix.

Tip: If you add the avocado too soon the avocado gets mashed while mixing.

Portion greens on four plates. Top with black bean salad and cooked chicken. Garnish with cilantro.
